MINT AND ORANGE HOT TODDYFor those of you unaware a hot toddy is an alcoholic drink traditionally made using whiskey and served hot. The original recipe requires lemon juice and cinnamon but I decided to mix it up a bit and use orange juice and mint leaves. The result was a refreshingly unusual drink that sure is tasty! Here’s what to do if you wish to make your own; Combine together 2 shots (~60ml) of Whiskey (I used Jack Daniels) with 2 shots of orange juice, 1 cup of boiling water and a teaspoon of honey. Stir until the honey have disolved. Serve with an orange slice (or 2) and a small bunch of mint leaves. This recipe makes 2 drinks. Enjoy!

BOOZEY BLACK RASPBERRY TIRAMISU

Coffee, liquor and dessert what could more could a person want in life? How about a combination of all three sitting together on a sugar dusted plate? Alas my Boozey Raspberry Tiramisu. Enjoy!

What you will need:
2 packets of sponge finger biscuits (400 grams)
1/2 cup espresso coffee, freshly brewed
1/4 cup Kahlua liqueur
1/4 cup Chambord  Black Raspberry Liqueur
500 grams mascarpone cheese
1 cup cream
1 cup icing sugar
Dutch cocoa and raspberries to serve

What to do:
Press the sponge fingers into the base of a rectangular dish. Whisk together the coffee, Chambord and Kahlua and pour it over the sponge fingers. Allow the liquid to be absorbed, softening the biscuits. Beat together the mascarpone, cream and icing sugar until light and fluffy. Once your sponge fingers have softened top with the mascarpone mixture smoothing down the top using the back of a spoon. Dust with the coca and garnish with a few raspberries. Too easy and such a tasty result.
Makes 8 serves. 

Make your own Limoncello

MAKE YOUR OWN LIMONCELLO

I understand this recipe may not follow the traditional method used to make limoncello, but this is what I did and it worked for me. I suggest using homegrown lemons or organic (The lemons I used are from my grandmothers garden) as you will be using the skin/rind of the lemon and normal store bought lemons can be coated in wax or pesticides. If you cannot find homegrown or organic, soak the lemons in apple cider vingear for a few minutes this should remove any residues.
Ok, so back the recipe…

 

What you will need:
1 Cup Sugar
1 Cup Water (plus extra for boiling)
Ice
1/2 Fresh Lemon Juice
The rind of 2 lemons, diced
500mL Plain Vodka

What to do:
Firstly you will need to candy the lemon peel to do this boil the peel in some water for 20 minutes or until it becomes slightly clear.
Remove from the stove and strain.
In a saucepan bring to the boil 1 cup of water, the sugar and lemon juice.
Add the lemon peel and bring to the boil for 5 minutes.
Reduce to a simmer and simmer for 10-15 minutes.
Allow to cool.
Strain 3/4 of the liquid (Do not discard as this lemon infused simple syrup is great in cocktails and cooking)
Pour the lemon peel and remaining liquid into a bottle and add the vodka.
Allow to infused for at least a week. The longer you leave it the more intense the flavour.
Once done strain and serve chilled.
Makes about 20 shooters or 700ml.

Pina Colada Yoghurt Popsicles (Alcoholic)

PINA COLADA YOGHURT POPSICLES (ALCOHOLIC)

A great adults only treat for the summertime. These yoghurt popsicles are super easy to make and perhaps best of all there is no need for special moulds or an ice cream maker.

 

What you will need:
2 Cups of fresh pineapple diced
2 Cups Plain Greek Yoghurt
1/2 Cup white Rum
1/2 Cup Coconut Juice
1/4 Cup Caster Sugar
Paper Cups
Paddlepop Sticks
Foil

What to do:
Combine all ingredients together in a blender and pulse until smooth.
Pour mixture into the Paper cups.
Cover the opening tightly with foil
Press paddlepop stick into the center of each cup
Freeze until solid, about 4-6 hours

Makes about 8, depending on cup size.
