WATERMELON GRANITA

If you haven’t tried Granita before you definitely need to and what better place to start than by making a simple watermelon grantia.  Perhaps best of all this recipe uses only 3 ingredients and doesn’t require boiling or an ice cream maker, like many other frozen desserts.

What to do is crazy simple. Firstly combine 4 cups of diced watermelon with 1/2 cup of caster sugar and 2 tablespoons of lemon juice in a blender and pulse until smooth. Pour the mixture into a metal pan and cover with plastic. Freeze for around 1 hour before removing and crushing any frozen lumps using the back of a fork. Return the mixture to the freezer and allow to freeze for a further 2 hours. Once again remove from the freezer and crush any icy lumps. That’s it, you’re done and ready to serve! This recipe can be made a couple of days in advance just ensure the mixture is well covered and you break it up before serving. Enjoy!
