PUMPKIN SPICE WAFFLES & BERRIES

tasty Waffles

Last Christmas my lovely Grandparents bought me a selection of kitchen gadgets that I could play around with, one of them being a waffle iron. After a bit of experimentation here’s what I came up with; Pumpkin Spice Waffles. I hope you enjoy them!

** WHAT YOU WILL NEED **

2 cups of self raising flour
2 eggs
2 tablespoons pumpkin spice, my recipe here
2 cups milk
2 tablespoons sugar
1 teaspoon vanilla
Powdered sugar & berries to serve

** WHAT TO DO **

Preheat and grease your waffle iron. In a large bowl sift in your flour and add your pumpkin spice and sugar. Whisk in your eggs, vanilla and milk. Continue to mix until a smooth batter has formed and pour into your waffle iron. Cook until crisp. Serve with some fresh berries and a light dusting of powdered sugar.

DOUBLE CHOCOLATE LOAF CAKE

Belgium Chocolate Loaf Cake
Ask any sweet tooth and they’ll tell you when it comes to sweets nothing beats a gooey, rich chocolate cake. This Double Chocolate Loaf cake is so rich and tasty you’ll be asking for seconds. I hope you enjoy it as much as I do! Feel free to spice it up with the addition of chocolate chips, nuts or even dried fruit.

** WHAT YOU WILL NEED **

200 grams unsalted butter
1 cup brown sugar
1 teaspoon vanilla
2 eggs
1 cup dark chocolate buttons, melted
2 cups self raising flour, sifted
3 tablespoons Dutch cocoa
1 cup buttermilk
Belgium chocolate cake loaf slice

** WHAT TO DO **

Grease and line a loaf tin and pre-heat your oven to Moderate. In a large bowl beat together your sugar, butter and vanilla. Whisk in your eggs then gently fold in the cooled melted chocolate. Gradually sift in your flour and cocoa powder. Mix in your buttermilk and beat until well combined. Pour you batter into your tin and cook for about 30 minutes of until a skewer just comes out clean. Serves around 10. Enjoy!

* Jess from Jess Classy has been hosting some guest posts lately, including my sugar free blueberry muffins (thanks Jess!) All of which I have thoroughly enjoyed reading. My fave guest post however had to be from Blogger (also) Jess of 26 & Not Counting, who shared her Weight Loss Story. A super motivating read and perhaps best of all honest and to the point without all that mushy stuff. Read it here.

* There’s no denying that Kaelah from Honey Bee in the City is one of my favourite Bloggers. Kaelah has been posting a bunch of cocktail recipes all of which look super tatsy. I recently tried her Sweet Blueberry Mojito  which was amazing!

* I recently indulged in a Matcha Green tea Latte at a local cafe and was instantly hooked. I was even happier when I discovered you can make your own at home using  Matcha Green Tea Latte Mix which is available online. I purchased mine here but there’s also a heap on Amazon if you’re looking for shipping outside of oz.

* Keeping with the season (Halloween!) this “Raining Bones” print on Society6 is a must have. Well for me at least! Find it here.

Cookie Dough Stuffed Chocolate Cupcakes

CHOCOLATE COOKIE DOUGH CUPCAKES

Cookie dough cupcake

** WHAT YOU WILL NEED **

1/2 roll of chocolate chip cookie dough
2 cups self raising flour
4 tablespoons butter
3 tablespoons Dutch cocoa
1 cup caster sugar
1 teaspoon vanilla
1 egg
1 cup milk
Frosting of your choice

** WHAT TO DO **

Preheat your oven to moderate (180DC) and grease or line a cupcake tray. In a large bowl beat together your butter, vanilla and sugar. One the mixture has lightened and the sugar has dissolved add your eggs and continue to beat until combined. Gradually sift in your flour and cocoa. Folding the batter lightly. Now add your milk.and stir until well combined. You don’t want any lumps. Fill your cupcake tray cups about one third full then add a teaspoon sized ball of your cookie dough into the centre. Spoon some mixture over the top of each dough ball and bake for about 20 minutes or until a skewer comes out clean. Allow your cupcakes to cool before topping with your favourite frosting. Enjoy!
