Making Fudge… Marshmallow Fudge

CARAMEL MARSHMALLOW FUDGE

I have been baking/cooking since I was a child and one thing I never have attempted to do is make fudge. I don’t know why I hadn’t but after a bit of Pinterest inspiration I decided to get on it. I started with a basic caramel fudge recipe that uses marshmallows which I got off my Grandmother. I would be lying if I said I got the recipe right on my first go, because I didn’t. It took me 3 attempts to get this recipe right but the effort was well worth it. Here’s my final result:

What you will need:
1/2 cup unsalted butter
1/2 cup caster sugar
1/2 cup packed brown sugar
1/2 cup heavy cream
2 teaspoons vanilla
2 cups icing sugar
2 cups plain marshmallows, chopped.

What to do:

Combine the brown and caster sugars, butter and cream in a large saucepan. Bring mixture to the boil whisking every so often. Allow the mixture to boil for around 5 minutes. Remove the pan from the heat and add in vanilla and icing sugar. Stir well until combined then fold in the chopped marshmallows. Whisk until the marshmallows are melted then pour into a lined tin. Allow to cool to room temperature then cover and refrigerate until set. Once set cut into your desired size and store in an airtight container. Enjoy!

Almond and Walnut Caramel Tart with an Easy Chocolate Sauce

What you will need:

1 Frozen shortcrust pastry flan
1 can of sweetened condensed milk (395 grams)
2 Tablespoons Vanilla
1 Tablespoon ground cinnamon
2 Eggs
1/3 compacted cup brown sugar
75 grams Almonds
75 Grams Walnuts

What to do:

Preheat the oven to moderate.
In a large bowl whisk together the eggs, condensed milk, vanilla, cinnamon and brown sugar.
Place the almonds and walnuts in the flan case and pour over the condensed milk mixture.
Bake in the oven for about 30 minutes or until the pie centre is set.
If you notice the crust becoming too brown cover it will foil and return to the oven.
Once cooked allow to set for at least 20 minutes before serving.
Serves about 8.

To make the Chocolate Sauce:

Simply melt 150 grams of milk chocolate over a saucepan of water. Add 1 Tablespoon of butter and 1 Tablespoon of milk. Whisk until combined and drizzle over the tart.

Easy Caramel Sauce

EASY CARAMEL SAUCE

This caramel sauce is delicious and so easy to make. It tastes great on ice cream and pancakes and you can even add a teaspoon of two in the centre of your cupcakes to create a gooey caramel centre.

Ingredients:
2 cups brown Sugar
1 Can condensed milk
½ cup margarine
½ cup milk
1 tsp vanilla extract

What to do:
In a saucepan combine sugar and condensed milk over a low heat until the sugar in dissolved.
Remove pan from the heat and add the margarine and vanilla.
Stir well and gradually add the milk whilst stirring.
You can store this sauce in the fridge for up to 4 days.
