Easy Custard Pumpkin Pie

EASY CUSTARD PUMPKIN PIE 

Continuing on with the pumpkin tread and to make use of the left over pumpkin puree in my freezer I made this deliciously simple pumpkin pie. This pie is easy to make and takes less than 40 minutes to cook and prepare.

What you will need:

3 Tablespoons custard powder
3 Tablespoons Caster Sugar
1 Tablespoon Pumpkin Spice. View my Recipe here.
1 cup pumpkin Puree
2 cups milk
1 egg
Uncooked pastry shell or you can make your own

What to do:

Preheat your oven to moderate and prepare your pie tin if necessary.
In a large saucepan heat your milk on a medium heat.
Gradually sift in the custard powder, sugar and pumpkin spice, whisking whilst doing so.
Cook the mixture until it thickens. Continue to whisk all throughout the cooking process.
Once thickened remove from the heat and beat in the egg and pumpkin puree.
Pour your mixture into the pie shell and bake for around 20 minutes or until the custard sets.
Dust with extra pumpkin spice and serve with a generous blob of cream.

Serves 8
