RICH DOUBLE CHOCOLATE MOUSSE
Chocolate mousse has to be one of my favourite desserts and is so easy to make. This rich double chocolate mousse is the perfect alongside a slice of cake or own it’s own with some fresh berries.
What you will need:
2 cups of dark chocolate, chopped
4 eggs at room temperature
1/2 cup caster sugar
2 tablespoons Dutch cocoa powder, sifted
500mL thickened cream
What to do:
Over a saucepan of boiling water melt your dark chocolate and set aside. In a large bowl beat together your eggs alongside the sugar until the mixture has thickened and lightened. Fold in the melted chocolate and cocoa powder. In a separate bowl beat your cream until thickened and gently fold into your chocolate mixture. Allow to chill for an hour or so before serving. Serves around 6.
