EASY BUTTERMILK BANANA BREAD
As mentioned in my previous post I have decided to undertake a 12 Loaf Baking Challenge. This challenge involves baking some form of bread each month of 2013. Each monthly recipe will based upon a specific ingredient or topic. This month’s ingredient is fruit. Originally I planned on making some raspberry scrolls or buns, but after spotting a huge bag of overripe bananas on the markdown table at my local supermarket I knew it was banana bread was the way to go.
What you need:
4 cups of self raising flour
4 extra ripe bananas, mashed
1 cup brown sugar
1 teaspoon vanilla
4 eggs
1/4 cup buttermilk
1/4 cup vegetable oil
What to do:
Preheat your oven to Moderate and grease and line a large loaf pan. In a large bowl beat together your eggs, sugar and vanilla. Add in your buttermilk and mashed banana. Continue to beat until your mix is well combined. Your banana needn’t be a smooth puree, small lumps are fine. Now gradually sift in your flour and fold until combined. Pour in your oil and mix well. Transfer your batter into the preprepared loaf pan and bake for around 30-40 minutes or until a skewer just comes out clean. This banana bread is best served warm with a dollop of butter and a drizzle of honey and also freezes well. Enjoy!
