PRAWN & BOTTARGA SPAGHETTI

In hopes of saving a bunch for my New Years Boat Trip I have been woking a few shifts at a local deli. While working I came across an unusual ingredient known as “Bottarga”. Curious as to what it was I got googling. Well, it turns out Bottarga is a salted and preserved fish popular in Italy. On a whim I purchased a small fillet and got experimental in the kitchen. This pasta is what I came up with. As you probably know I don’t eat seafood or meat so didn’t sample this dish myself but my father did and said he really enjoyed it, especially the bottarga.
What will you need:
1 pack of spaghetti pasta
2 tablespoons of crushed garlic
300 grams raw peeled prawns
1/4 cup diced chives
1/4 cup olive oil
100 grams of Bottarga, grated
The juice of 1/2 lemon
1/2 cup finely grated parmesan cheese
What to do:
Boil your pasta until al dente. In a frypan heat a small amount of oil. Add the garlic and cook the prawns until they just turn orange. Add your lemon juice and bottarga and toss through your cooked pasta along with the olive oil and cheese. Serve with the chopped chives. Enjoy!

GARLIC PRAWN & BASIL PASTA

You have probably noticed I have been cooking a lot of pasta lately and not all of it being vegetarian. These resent carnivorous recipes are popping up because my wonderful Dad has come to visit for a few weeks and is the biggest pasta lover I have ever known and happens to also enjoy meat. These recipes however can be easily made vegetarian by omitting any non-vegetarian components like the prawns in this dish or Bacon in my Creamy Alfredo recipe. Enjoy!What you will need:
1 packet of spaghetti pasta
300 grams of peeled raw prawns (or for my International readers shrimp)
4 tablespoons of fresh crushed garlic
1/4 cup fresh basil, finely chopped
1 teaspoon of chilli powder
2 tablespoons lemon juice
1/2 cup capsicum (peppers). I used a mixture of red, green and yellow
1/4 cup of butter
1/4 cup olive oil
What to do:
In a large saucepan of boiling salted water cook your pasta until al dente. Once the pasta is almost done melt your butter in a frying pan and add the crushed garlic. Lightly fry your diced capsicum and prawns until the capsicum is just tender and the prawns have just turned orange. Do not overcook the prawns as they will become tough. Once cooked toss through your pasta and add the chopped basil, lemon juice and chilli powder. Dress with the olive oil and garnish with a few sprigs of basil. Serves 4.

EASY CREAMY ALFREDO PASTA

What you will need:
1 pack of spaghetti pasta
4 tablespoons of butter
1/2 onion, diced
2 cups of heavy cream
1/2 cup sharp parmesan cheese, grated
1/2 cup baby mozzarella
1/2 cup Pecorino cheese, grated
2 cloves of garlic, crushed
150 grams of bacon, roughly chopped
Cracked Pepper
Parsley for garnish

What to do:
Boil your pasta until al dente. In the mean time sauté your onions and bacon in a frypan with a small amount of oil, the crushed garlic and butter. Reduce the heat to low and add in the cream. Stir frequently and allow to cook for 2-3 minutes. Add your cheeses and continue to whisk until they have melted and your sauce has thickened become smooth. This usually takes around 8-10 minutes. Add some cracked pepper and remove from the heat. Toss thought the cooked and strained pasta and serve with some parsley as garnish. Serves 4.

GARLIC AND LEMON SPAGHETTI

This pasta dish is so easy to make and the light and zesty garlic and lemon sauce is a great alternative to heavy cream and tomato based sauces. Perhaps best off all this dish tastes great and can feed 4 people for less than $7.00!

What you will need:
500 grams of thin spaghetti
1 cup of cherry tomatoes, sliced in halves
2 tablespoons of italian parsley chopped finely
1/2 cup fresh lemon juice
1/4 olive oil
3 cloves of garlic mincedWhat to do:
Boil your pasta in a large pot of salted water and cook until al dente. Once done strain your pasta well. Pour in the olive oil and garlic and toss until the spaghetti is well coated. Add the chopped parsley, lemon juice and tomatoes and continue to toss. Serve with an extra sprig of parsley and some grated parmesan.
Serves 4.

CHEESY PESTO PASTA BAKE

What you will need:
500 grams penne pasta
4 tablespoons butter
1 cup milk
1cup vegetable stock
1 cup flour
1/2 cup fresh basil pesto. You can view my recipe here.
1 cup grated cheese

What to do:
Preheat your oven to moderate and lightly grease a baking dish. Boil your pasta until al dente. In a saucepan melt your butter. Gradually sift in your flour a bit at a time whilst alternating and pouring in the milk and stock. Whilst until the flour has fully dissolved and the liquid has thickened. Remove from the heat and stir in your pesto. Scoop your pasta into the baking dish and pour over your sauce. Top with the grated cheese. Bake for about 15 minutes or until the cheese has melted. Serves around 8.
