THE PERFECT SPICED ROAST POTATOES
Roast potatoes have to be my all time favourite thing in the world. No exaggeration if it wasn’t for the prospects of an expanding waist band and scurvy I would live on them. After much practice and a lot of trial and error I believe I have developed the perfect method for making the best roast potatoes ever. What is the secret you ask? Parboiling, the perfect oil and paper towel. Here’s my How-To;
What you will need:
1 kilo of washed potatoes, I like to use Desiree
1 cup of rice bran oil (This oil reaches high temperatures without burning or smoking so is perfect for roasting)
Sea salt
4 tablespoons thinly sliced shallots
1 teaspoon paprika
1 teaspoon of vegetable salt
1 teaspoon chilli powder
What to do:
Wash your potatoes well and chop into chunks. I like to leave the skin on as it crisps up really well but feel free to remove it if you dislike the taste or texture. Now Parboil your potatoes in large saucepan of salted hot water. You want your potatoes to be almost done whilst still retaining their shape. Remove the potatoes from the water and allow to cool to room temperature. Using a fork lightly scratch the flesh sides of the potatoes. Toss your potatoes through a small amount of the oil and coat in the salts, paprika, chilli powder and shallots. In a large electric frypan pour in your oil and allow it to heat on high. Carefully add your potatoes, tossing regularly Once your potatoes are golden brown and soft in the centre remove them from the pan and absorb any excess oil using a paper towel. Season with some extra sea salt and serve. Yum!
Mmm, they look amazing! I love crispy roast potatoes, they are one of the best parts about having a Roast! (I think. That and parsnips. Oh and sweet potato!) I will most definitely be pinching this recipe!!!

Why are these called roast potatoes?

I called these “Roast Potatoes” because they are pan roasted and because so, taste like roasted potatoes. I hope that explains the title. I am not too fused on cooking technicalities and since this is my recipe, I called it what I saw fitting.
