ZESTY LEMON BARS
My take on the traditional lemon bar. A zesty, gooey slice made with lemons from my Grandparents garden. Enjoy.
What you will need:
The base:
5 Tablespoons Margarine or butter
1/4 cup caster sugar
2 Tablespoons Vanilla Sugar
1 Cup Plain Flour
The Lemon Filling:
3 eggs
1.5 cups Caster Sugar
1/2 Tablespoon finely grated Lemon Zest
1/2 Freshly squeezed Lemon Juice
2/3 Cup Plain Flour
What to do:
Grease and line a slice tray and preheat the oven to moderate
Cream together the sugar and butter, add the sugars and flour.
Mix until a soft dough is formed.
Press this dough evenly into the tray and bake for 15 minutes or until slightly firm
(Do no overcook as it will be going back into the oven later)
In the meantime make the lemon filling.
To do this combine all ingredients together in a large bowl and whisk well.
Pour filling over base and back for another 20-25 minutes.
Dust with icing sugar and serve.
Makes about 20 servings.
