BANANA & ALMOND PANCAKES

These pancakes are a winner at any breakfast and combine two of my favourite foods bananas and almonds. Serve with my Caramel Sauce or Maple Syrup.

What you need:
1.5 cups sifted self raising flour
1 cup milk (skim, soy, rice and almond varieties work fine)
1 egg
2 medium bananas
2 teaspoons of vanilla sugar
1/4 cup of roughly chopped Almonds
Oil for frying
Maple Syrup for serving

What to do:
Place milk and egg in a large bowl and whisk.
Mash 1 banana and cut the other into thin slices.
Add the mashed banana to the egg and milk mix and gradually add the sifted flour and vanilla sugar.
Whisk until combined. Lumps are ok.
Heat oil in a fry pan and pour in the batter.
Press the banana slices and almonds into the raw batter side and drizzle with maple syrup.
When the first side is cooked, flip and continue cooking.
Serve with a drizzle of maple syrup and extra almonds.

Serves around 3
