DIY Beauty: Strawberry & Brown Sugar Body Polish

DIY BEAUTY: STRAWBERRY & BROWN SUGAR BODY POLISH

What you need to do is simple. In a large bowl combine together 1 cup of brown sugar with 2 Tablespoons of strawberry essence, 3 tablespoons of water and a few drops of almond oil (Any oil works fine but I find almond oil absorbs into the skin the best). Mix until combined and store in an airtight container or jar.

Feel free to switch the strawberry essence for other varieties such as orange, peppermint and even chocolate.
Enjoy.

Strawberry Shortcake Milkshake

What you will need:
1 cup milk
1 Teaspoon natural strawberry essence
A few drops of pink food dye
1/4 Cream
1/4 Cup white chocolate buttons
1/2 cup ice

What to do:
In a small saucepan on a low heat melt the white chocolate buttons in the milk
Allow this mixture too cool.
In a blender combine the cooled white chocolate milk with all the other ingredients and pulse until smooth.
Serve as is or with a blob or cream and extra shaved white chocolate.
Serves 3-4

No Bake Mini Berry Cheesecakes

NO BAKE BERRY CHEESECAKES

What you will need…
Base
200 grams crushed plain sweet biscuits, I used Arnotts Marie Biscuits
100 Grams Melted Butter
50 Grams Almond Meal
Filling
500 Grams cream cheese
100 Grams of icing (confectioners) sugar
200 Grams heavy cream
Topping
Pack Frozen mixed Berries, defrosted. Use as many or as little as you like
Strawberry Sauce
200 grams strawberries or any other berries (Fresh or frozen)
1/4 cup caster sugar
1/4 cup water (Omit this if you used frozen berries)

What to do:
In a bowl combine the crushed biscuits, melted butter and almond meal.
Press this mixture into the bottom of 6 lightly greased remington dishes. I used silicon dishes for easy removal.
Place in fridge while you make the filling.
In a large metal or glass bowl beat the cream cheese and cream together using an electric beater.
Once well combined gently fold in the sugar.
Spoon mixture on top of the bases and return to the fridge.
Now you start to make the strawberry sauce.
In a blender or food processor puree the strawberry/berries along with the sugar and water.
Pour this puree into a small saucepan and on a low heat cook until the sugar dissolves.
Remove from the heat and strain the sauce to remove any pips and seeds. Allow the sauce to cool.

To serve:

Gently remove the cheesecakes from the dishes.
Place some berries on top and drizzle with the chilled strawberry sauce. Alternatively place the berries and sauce onto the top of the cheesecakes and serve straight out of the dishes.
Makes 6 serves.

Dairy Free Strawberry Sorbet

DAIRY FREE STRAWBERRY SORBET

What you will need:
100ml Water
1/3 Cup Caster Sugar
500 grams strawberries (I used frozen, however fresh is fine too)
1 Tablespoon Lime Juice

What to do:
In a saucepan on a low heat combine the water and sugar and simmer until the sugar is completely dissolved. This usually takes around 4 minutes.
Bring the mixture to the boil and cook for 1 minute.
Remove from heat and allow to cool in the fridge until chilled.
In the meantime blend or process the strawberries until smooth.
Add the lime juice, stir well and place the puree in the fridge until chilled.
Once chilled, combine both the sugar syrup and puree together in a large bowl and freeze until soild.
I like to re-use single serve frozen yogurt containers so I can take the sorbet with me anywhere, but an ice cream tub or container is fine also.
Freeze until soild. I usually wait overnight, but 4-5 Hours should be enough.
Enjoy.

Make it Alcoholic!
If you wish, you can add some white rum to the mixture before freezing. This will create a sort of strawberry daiquiri sorbet. Alternatively blend up the sorbet with some rum and a bit of crushed ice for an easy frozen cocktail.
