APRICOT AND WALNUT PIE

It’s stone fruit season here in Australia and that means it time to start cooking with this seasons sweetest fruits. Today I am sharing with you my Walnut and Apricot Pie. If apricots aren’t in season where you are from canned works perfectly fine in this recipe too. Enjoy!

** WHAT YOU WILL NEED **

1 large sheet of sweet short crust pastry, homemade or store bought is fine
2 eggs, whisked
1 can of condensed milk
1 teaspoon of vanilla
10-12 apricots peeled and sliced into halves
1 cup of walnuts

** WHAT TO DO **

Preheat your oven to moderate and grease and line your pie dish. Evenly layout your pastry onto you dish ensuring the edges are covered and pushed down. In a large bowl whisk together your eggs, vanilla and condensed milk. Pour this mixture into your dish and top with the apricot halves and walnuts. Bake for about 30-40 or until the pastry is crisp and the centre has thickened.This recipe serves around 8. Enjoy!

Butterscotch Schnapps Apple Pie

EASY BUTTERSCOTCH SCHNAPPS APPLE PIE

Inspired by the Spiced Bourbon Apple Pie  Emma from A Beautiful Mess recently posted comes my very own and first ever apple pie. I decided to tweak Emma’s recipe a bit and used Butterscotch Schnapps instead of bourbon and my own pastry recipe and was very pleased with the result. So here you have it my Butterscotch Schnapps Apple Pie. Yum!

**WHAT YOU WILL NEED**

Becky’s Sweet Crust Pastry…

2 cups plain flour
1/4 cup icing sugar, sifted
1/3 cup caster sugar
200 grams unsalted butter, chopped
2 eggs yolks at room temperature, whisked

Apple Filling…

4 medium Granny Smith AppleS
Juice of 1 fresh lemon
3 Tablespoons unsalted butter
3/4 cup brown sugar
1/4 cup Butterscotch Schnapps
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg

**WHAT TO DO**

Pre-heat your oven to Moderate and lightly grease you pie tray/tin.

To make your Pastry…

Homemade pastry can be a tough culinary skill to learn and master. If making pastry isn’t one of your strengths store bought short crust is totally fine fine for this recipe. Just skip this step.

In a large bowl sift in your flour and icing sugar. Using your fingertips rub in the butter, lifting the mixture up whilst doing so to incorporate air into the mix. Mix in the caster sugar and add in the whisked egg yolks. Knead the mixture until a soft dough forms. Be careful not to over handle the dough or it will become tough and rubbery. Divide your dough into 2 pieces one slightly smaller for the pie lid. Wrap in plastic wrap and refrigerate while you make the filling.

To make the filling…

Peel your apples and cut into thin wedges or slices, drizzle with the lemon juice to stop discolouration. In a medium sized saucepan on a medium heat melt your butter together along with the sugar. Once the sugar has mostly dissolved add in your apple slices and stir until well combined. Cook until the apples just start to soften then remove from the heat. Mix in your butterscotch schnapps, nutmeg and cinnamon.

Assemble your pie…

Remove your pastry from the fridge and roll out the large portion on a floured board or bench. You want a base approximately 30cm wide and 3-4mm high. Lay your pastry over your pre-prepared pie tin and mould to fit. Trim off any excess pastry and tidy the edges. Scoop your pie filling on top of the base. Begin to make your pastry top. Roll out the smaller portion of the pastry to a circle slightly smaller than the first one and the same thickness. Lay out on top of your filling. Push down the edges and trim off any excess. Brush with milk and poke a few holes in the surface. Bake in a moderate oven for around 30 minutes or until the apples are soft and the pastry is crsip. Serve with a generous blob of cream or ice cream and a sprinkle of cinnamon. Enjoy!

Almond and Walnut Caramel Tart with an Easy Chocolate Sauce

What you will need:

1 Frozen shortcrust pastry flan
1 can of sweetened condensed milk (395 grams)
2 Tablespoons Vanilla
1 Tablespoon ground cinnamon
2 Eggs
1/3 compacted cup brown sugar
75 grams Almonds
75 Grams Walnuts

What to do:

Preheat the oven to moderate.
In a large bowl whisk together the eggs, condensed milk, vanilla, cinnamon and brown sugar.
Place the almonds and walnuts in the flan case and pour over the condensed milk mixture.
Bake in the oven for about 30 minutes or until the pie centre is set.
If you notice the crust becoming too brown cover it will foil and return to the oven.
Once cooked allow to set for at least 20 minutes before serving.
Serves about 8.

To make the Chocolate Sauce:

Simply melt 150 grams of milk chocolate over a saucepan of water. Add 1 Tablespoon of butter and 1 Tablespoon of milk. Whisk until combined and drizzle over the tart.

Rich Double Chocolate Cheesecake Pie

RICH DOUBLE CHOCOLATE PIE

This overindulgent pie looks impressive but is actually pretty simple to make and doesn’t require a whole basket full of ingredients.

What you will need:

Pre Bought Pie Crust or you can make your own
375 grams dark chocolate, chopped
2 cups thickening cream
500g cream cheese
3/4 cup brown sugar
2 tablespoons unsweetened cocoa
100 grams chocolate chips
2 Tablespoons milk
Extra Choc Chips for decorating

What to do: 

Place a saucepan with water on the stove and bring the water to the boil.
Place another larger saucepan on top of the first, ensuring the base doesn’t meet the water.
Place your dark chocolate in the top saucepan and using a metal long handled spoon stir the chocolate until melted.
Divide the chocolate into 2 separate bowls ceramic or metal bowls.
In one of the bowls add half of the cream (1 Cup) and using a hand mixer blend until combined. This mixture is the first layer of your pie.
In the second bowl add the cream cheese and blend until light and fluffy.
Add the cream, brown sugar and sifted cocoa.
Continue blending until well combined.
Pour the Cream and chocolate mixture into the pie shell, creating your first layer.
Now spoon the cream cheese mixture over the first layer and spread evenly and to the outer crust.

For decoration…
In a saucepan melt the choc chips. Once melted add the milk and mix well.
Drizzle the chocolate and milk over the pie and garnish with a few extra chocolate chips.
Chill in the fridge for at least one hour or until set.

Serves 8. Enjoy.

Easy 180 Calorie Veggie Egg Pies

180 CALORIE VEGGIE EGG PIES

What you will need…
2 Free Range eggs
1/2 cup skim milk
4 Tablespoons of Light Ricotta/Cottage Cheese
1 Tomato, very ripe and diced roughly
1 cup baby spinach leaves
1/2 white onion, diced finely
1 tablespoon Minced Chilli
1 Tablespoon Minced Garlic
1 teaspoon Olive Oil, for frying

What to do…
Preheat oven to moderate
Heat oil in the frypan add the chilli, garlic and onion.
Cook until onion becomes transparent.
Add in the tomato and spinach. Cook until the spinach wilts.
Remove from the heat and stir in the ricotta or cottage cheese.
In a small bowl whisk together the eggs and milk.
Spoon the vegetable and cheese mixture evenly into 2 small baking dishes and pour over the whisked eggs and milk.
Season if desired and bake in the oven for about 15 minutes or until the egg has set.
Serves 2 and has approx. 180 Calories per serve!
