DOUBLE CHOCOLATE LOAF CAKE

Belgium Chocolate Loaf Cake
Ask any sweet tooth and they’ll tell you when it comes to sweets nothing beats a gooey, rich chocolate cake. This Double Chocolate Loaf cake is so rich and tasty you’ll be asking for seconds. I hope you enjoy it as much as I do! Feel free to spice it up with the addition of chocolate chips, nuts or even dried fruit.

** WHAT YOU WILL NEED **

200 grams unsalted butter
1 cup brown sugar
1 teaspoon vanilla
2 eggs
1 cup dark chocolate buttons, melted
2 cups self raising flour, sifted
3 tablespoons Dutch cocoa
1 cup buttermilk
Belgium chocolate cake loaf slice

** WHAT TO DO **

Grease and line a loaf tin and pre-heat your oven to Moderate. In a large bowl beat together your sugar, butter and vanilla. Whisk in your eggs then gently fold in the cooled melted chocolate. Gradually sift in your flour and cocoa powder. Mix in your buttermilk and beat until well combined. Pour you batter into your tin and cook for about 30 minutes of until a skewer just comes out clean. Serves around 10. Enjoy!

Pineapple Upside Down Cake

This is my all time favourite cake. Maybe it’s the sweet fresh pineapple or the gooey caramel glaze, i don’t know but nevertheless its delicious.

What you will need:
1 Fresh slightly over-ripe pineapple cup into thin slices (Canned pineapple is fine as well)
1/2 cup margarine or butter
3/4 cup brown sugar
2 eggs
1 Tablespoon vanilla essence
2 cups SR Flour
1/2 cup milk
Glazed Cheries for decoration (Optional)
Glaze:
4 Tablespoons Melted Butter
1/3 cup brown sugar

What to do:
Preheat oven to 180ºC
Grease and line a cake tin
Make the glaze first by whisking together the sugar and butter.
Insure butter is slightly cooled before adding the sugar otherwise it may seperate.
Pour glaze into the lined tray and arrange the pineapple on top of it in the bottom of the pan
Next beat butter, sugar and vanilla together until light and fluffy.
Add eggs then the flour and milk.
Mix well until combined.
Pour over the pineapple and glaze
and bake for arounf 45 minutes or until skewer comes out clean.
Allow to cool, turn over and decorte with glace cherries if you wish.
Enjoy.

Easy Lemon and Coconut Cake

LEMON & COCONUT CAKE

My grandparents have a fantastic Lemon tree that bears plentiful fruit. I am forever going over to their place to visit and pick myself a few lemons to use to for my baking. There are SO many things you can make out of lemons and this is just one of my many recipes. This cake is so easy to make and a great change from intensely sweet cake varieties.

What you will need:
250g Butter
1 Cup Caster Sugar
1 Tablespoon Vanilla
1 Cup Coconut
1 Cup SR Flour (Sifted)
4 Eggs
1/4 cup Lemon Juice
2 Tablespoons finely grated lemon zest
Extra coconut

What to do:
Preheat the oven to 180ºC and line a grease a cake tin
In a saucepan melt the butter
Add the sugar and vanilla and mix until combined
Sift in the flour
Add the eggs one at a time stiring in between
Add the coconut lemon juice and zest.
Stir until combined.
Pour into th pre-prepared tray
Dust with extra coconut
Bake for around 30 minutes or until skewer comes out clean

This cake freezes well for up to a fornight and tastes best un-iced in my opinion.
