PEANUT BUTTER FRENCH TOAST WITH CARAMELISED BANANA

What you will need:
2/3 cup milk
1/3 cup caster sugar
3 eggs
4 tablespoons peanut Butter
1 teaspoon vanilla
6 slices of thick bread
3 small bananas, cut in lengthways
1/4 cup brown sugar
2 tablespoons butter
Oil for frying
What to do:
Whisk together your eggs, milk, sugar, vanilla and peanut butter in a large bowl. Generously cover your bread slices in this mixture. Fry each slice in a preheated pan until crisp. Once done place on a paper towel to absorb any excess oil. To make your caramelised banana melt together your sugar and butter in a separate frypan. When the mixture is just bubbling toss through your banana slices and allow them to slightly darken. Once done remove the banana from the pan and serve on top of your french toast with a generous drizzle or maple syrup or honey. Serves 3.
